We are looking for Assistant Cake Chef for a Top-class outlet located in Al Ain, Abu Dhabi.
To qualify for this role, you should have at least 3 years of experience in the same role in the Food & Beverage Industry.
You will perform all the below responsibilities as an Assistant Chef, in case of unavailability of the Executive Chef (that could be his absence, off site, or working on different site)
Responsibilities:
Supervises all cakes, pastry and bakery staff to the best knowledge
Ensures the highest standard of hygiene in the entire cake, pastry, and bakery section
Controls the staff attendance of all pastry and bakery employees
Prepares all cakes, pastry, and bakery products in accordance to given standards and procedures
Must be highly cost conscious and constantly involved in efficient pastry production and waste control
To be responsible for all inter kitchen transfer for banquet and all a la carte restaurants or food outlets
Maintains a friendly and pleasant image always. Always checks personal hygiene and grooming standards and leads by example. Always wears a clean and tidy uniform
Coordinates closely with the Executive Chef in determining quality and quantity of daily food products to be purchased and prepared. Informs the Executive Chef immediately about out-of-stock items or non-delivered food products
Discusses with the Executive Chef and recommends menu price adjustments when necessary. Determines selling prices of unlisted food items.
Reports to Executive Chef all staff matters, recommends promotions, transfers and all staff related points
Checks with maintenance that all kitchen equipment is functioning properly, makes an attempt to prevent damage or loss of equipment.
Staff planning according to occupancy level and business forecast
Actively involved with suppliers to procure the best available pastry and bakery products on the market and to use them innovatively
Attends the daily kitchen briefings
Coordinates with banquet and colleagues EO, material list and event orders
Prevents the use of spoiled or contained products in any place of food preparation and prevents employees who are ill or suffering from infection from taking part in the preparation or handling food
Works hands on in all aspects of his operation
Acknowledges and screens daily work schedules of pastry staff
Conducts daily briefing and de-briefing of staff members
Communicates effectively with guests, subordinates, immediate supervisors and other section heads
Manages time effectively by meeting deadlines on time
Assists in budgetary and payroll expense control as required
Identifies and solves problems professionally
Participates in community projects or activities in order to promote the hotel’s image and cooperation to improve community relationships
Communicates effectively with guests, clients, business partners and staff
Coaches and counsels all staff when applicable
Evaluates objectively the performance of his staff
Motivates staff to grow within the company
The Executive Pastry Chef is an active & enthusiastic team player and team leader. He must set a sample for all staff
Provides assistance to the staff when required
Maintains grooming standards for all staff
Requirements
Requirements:
Experience of 5 years as Executive Cake Chef in the Food & Beverage industry
Bachelors degree in culinary arts or relevant field
Must have full knowledge of sanitation requirements in handling food
High level of creativity, specialized knowledge in international cakes and pastries, sugar work, chocolate work, wedding and specialty cakes, up to market bakery products
Strong leadership quality, training techniques, excellent communication and organizational skills.
